“Purity and tradition in our most selected wine. A treat for your senses”
Ábaco de Arte y Parte
Arte&Parte is our new project in Ribera del Duero with our same philosophy: to make wines with personality that reflect the uniqueness of each soil
100% red wine from very old vines, aged between 40 and 120 years, from vineyards located in three different villages in the Ribera del Duero. Harvested by hand in small 12 kg boxes and meticulously inspected, bunch by bunch, at the selection table.
Production and Aging
Made in stainless steel with cold pre-fermentation maceration for 5 days. Fermentation takes place spontaneously with native yeasts at a carefully controlled
temperature. Several daily pump-overs until fermentation phase ends, then there is a short period of post-fermentation maceration. Finally, it is removed and pressed in a vertical press to guarantee the greatest care and respect in this process.
Immediately afterwards the wine is taken to the barrels where it will undergo malolactic fermentation during which, periodically, a smooth battonage is carried out.
