Tempranillo from volcanic soil, sandy clay loam from our Umbría plot, very stony due to the presence of pyroclasts and quartzites.
Handpicked at the first light of morning into 10 kg boxes, with selection in both vineyard and winery. Fermentation in stainless steel with native wild yeasts followed by malolactic fermentation in large-volume barrels.
Refined for 14 months in French and Austrian oak.
Calar de Montanchuelos
Tempranillo from sandy clay loam soil from various plots, composed of marls and sandstones, with a significant volcanic component.
Handpicked in 10 kg boxes, with selection in both the vineyard and winery. Pre-fermentative maceration for 4-5 days followed by fermentation in stainless steel with native wild yeasts.
Refined for 9 months in 500 l French oak barrels.
Calar de Montanchuelos. Chardonnay
Chardonnay from our Cabezaparda plot, located in the most calcareous area on a small hill in this location facing east.
Handpicked at the first light of morning into 10 kg boxes, with selection in both vineyard and winery. Fermentation in stainless steel and 500 l French oak barrels with native wild yeasts.
Refined for 6 months in French oak with weekly battonage.
