Calar de la Umbría

Tempranillo from our La Umbría volcanic plot.  Sandy clay loam soil, with a stony appearance due to weathering of the quartzites and pyroclasts.

Early morning manual harvest in 10 kg boxes, with selection in the vineyard and in the cellar. Fermentation in stainless steel with autochthonous natural yeasts and subsequent malolactic fermentation in large volume barrels.

The wine was finished for 14 months in French and Austrian oak.

Calar de Montanchuelos

Tempranillo fromsandy clay loam soils from several plots, made up of marl and sandstone, with a large volcanic component.

Manual harvest in boxes of 10 kg, with selection in the vineyard and in the cellar. Pre-fermentative maceration for 4-5 days for subsequent fermentation in stainless steel with native natural yeasts.

The wine was finish for 9 months in 500 l French oak barrels.

Calar de Montanchuelos. Chardonnay

Chardonnay from our Cabezaparda plot. Located in a small hill, facing east, it is our most calcareous area.

Handpicked at the first light of morning into 10 kg boxes, with selection in both vineyard and winery. Fermentation in stainless steel and 500 l French oak barrels with native wild yeasts.

Refined for 6 months in French oak with weekly battonage.
